Recipe – Bread, Basic Sourdough

Per loaf of bread (minimum two)
1 c starter
1 c water
1 t salt
1-1/2 to 2 T oil
3 to 4 T honey, molasses, or sugar
1 egg
4 to 5 c flour
Combine starter, water, sugar, and 1 c flour (per loaf). Mix well and let sit for 2 to 4 hours (or overnight in refrigerator). Mix in all other ingredients. Slowly add flour by half cups until it forms a ball. Knead with flour until no longer sticky. Divide into portions and let rise until double. Brush the top with oil. Bake at 400 for 20 to 25 minutes, turning at 10 minutes.
ITALIAN BREAD
Omit the egg.
FRENCH BREAD
Omit the egg and oil.
ENGLISH BREAD
Replace up to half the water with milk.
WHOLE GRAIN
Replace up to half the flour with whole wheat and/or rye.
